Spinach Chutney / Palak Chutney

Ingredients:

1 small bunch spinach, chopped

1/4 cup grated coconut

2 green chillies, chopped

2 tbsp roasted gram / pottukadala

small piece ginger

small piece tamarind

salt to taste

1/4 tsp mustard seeds

1 sprig curry leaves

2 tsp oil

Preparation:

  1. In a non stick pan add spinach leaves and saute for a minute without adding any water. Switch off the flame and allow to cool.
  2. Transfer this to a blender and make a puree. Then add grated coconut, roasted gram, green chillies, ginger, tamarind and salt to this and grind to a paste adding little water.
  3. Heat oil in a pan and splutter mustard seeds. Add curry leaves and switch off the flame.
  4. Add this tempering to the chutney and mix well. Adjust the salt.
  5. Serve with dosa / idli....
