Spinach / Palak Naan

Ingredients:
1 1/2 cup wheat flour
1/2 tsp baking powder
1/4 tsp baking soda
salt to taste
1/4 cup yogurt
1/4 cup spinach puree ( 1 cup spinach / palak leaves)
1 tsp oil
Preparation:
- In a blender, add the chopped spinach and grind well to a puree adding little water ( about 1/4 cup spinach puree). Keep it aside.
- In a mixing bowl, add wheat flour, baking powder, baking soda and salt and mix well.
- Add yogurt into this and mix well.
- Then add spinach puree and 1 tsp of oil and mix well and knead well to a smooth dough.
- Spread little oil on top and keep it covered for 1 hour.
- Divide the dough into equal portions of balls.
- Dust your rolling board with some flour and roll out the ball into oval or round shape.
- Heat a tawa / pan and place the naan and cook at medium flame until bubbles starts to appear and the base is cooked and browned.
- Then carefully lift the naan with tongs and cook the other side by placing directly on the flame.
- Move the naan all over the flame to ensure the sides and the surfaces are well cooked with some brown spots.
- Remove from the pan and brush naan with some melted butter and cover with a towel to keep warm.
- If you are not placing on direct flame, flip the naan when bubbles form on the surface of the naan and cook for 1-2 minutes until lightly browned and cooked through..
