Spinach - Toor dal / Cheera Parippu Thoran

Ingredients:


1 bunch spinach / green amaranth, finely chopped

1/2 cup toor dal / thuvara parippu

3 green chillies, chopped

3/4 cup grated coconut

1-2 garlic cloves

3 shallots

1/2 tsp turmeric powder

1 tsp mustard seeds

2 dry red chillies

2 sprig curry leaves

salt to taste

1 1/2 tbsp coconut oil


Preparation:


  1. Wash the dal and cook in a pan adding salt and enough water till cooked and keep it aside.
  2. Wash and finely chop the spinach leaves and keep it aside.
  3. Crush together grated coconut, shallots, garlic, green chillies, turmeric powder and few curry leaves.
  4. Mix this crushed coconut mixture with chopped spinach leaves. Add salt, mix well and keep it aside.
  5. Heat oil in a wide pan over medium flame and splutter mustard seeds. Add dry red chillies and curry leaves.
  6. Add spinach - coconut mixture and cook covered at low flame for 8-10 minutes, stirring occasionally.
  7. Add cooked dal to this and mix well for few minutes until it is dry…..Remove from flame and serve with rice…
