Strawberry Phirni

Ingredients:
1/4 cup basmati rice
1 litre milk
3/4 cup sugar
1 cup strawberries, chopped
1/2 tsp cardamom powder
For Garnishing:
chopped pistachios
rose syrup / strawberry syrup
strawberry slices
Preparation:
- Wash and soak basmati rice in enough water for an hour. Drain the water and grind the rice to a coarse paste with 3 tbsp of milk and keep it aside.
- In a blender, add chopped strawberries and blend to a smooth puree and keep it aside.
- Heat milk in a heavy bottomed pan and bring it to a boil. Then reduce the flame to low and gradually add the rice paste, stirring continuously.
- Cook at low flame stirring continuously till the rice gets cooked completely.
- Then add sugar and mix well till the mixture thickens. Add cardamom powder and mix well.
- Switch off the flame and allow it to cool completely.
- Now add strawberry puree to the cooled phirni and mix it well.
- Pour them into serving glasses and then refrigerate.
- Garnish with strawberry syrup / rose syrup, chopped pistachios and strawberry slices...Serve chilled...
