Sweet Mango Pickle
A delightful sweet and tangy mango pickle made with firm ripe mangoes, sugar, salt, vinegar, and a blend of aromatic spices. This easy-to-make pickle is tempered with mustard seeds, fenugreek, dry red chillies, curry leaves, and asafoetida, perfect to serve with rice or biriyani.

Ingredients:
2 medium firm ripe / sweet mangoes
1 tbsp sugar
1 1/2 tsp salt
2-3 tbsp vinegar
1 1/4 tbsp kashmiri chilli powder ( adjust to your spice level )
3 tbsp sesame / gingely oil
1 tsp mustard seeds
4 dry red chillies
1 sprig curry leaves
1/4 tsp fenugreek seeds
a pinch of asafoetida
Preparation:
- Peel and chop the mangoes into small cubes.
- In a bowl, add chopped mangoes, sugar, salt, vinegar and kashmiri chilli powder and mix well.
- Keep it aside for 5 minutes until the mango releases some juice and everything blends well.
- Heat sesame oil in a pan and splutter mustard seeds.
- Add fenugreek seeds, dry red chillies, curry leaves and asafoetida and mix well.
- Pour this hot tempering over the mango mix and stir well until the mango pieces are well coated.
- Let it cool and store in a glass bottle / jar and keep it in the refrigerator...Serve with rice, biriyani etc..
