Ingredients:


2 medium firm ripe / sweet mangoes

1 tbsp sugar

1 1/2 tsp salt

2-3 tbsp vinegar

1 1/4 tbsp kashmiri chilli powder ( adjust to your spice level )

3 tbsp sesame / gingely oil

1 tsp mustard seeds

4 dry red chillies

1 sprig curry leaves

1/4 tsp fenugreek seeds

a pinch of asafoetida


Preparation:


  1. Peel and chop the mangoes into small cubes.
  2. In a bowl, add chopped mangoes, sugar, salt, vinegar and kashmiri chilli powder and mix well.
  3. Keep it aside for 5 minutes until the mango releases some juice and everything blends well.
  4. Heat sesame oil in a pan and splutter mustard seeds.
  5. Add fenugreek seeds, dry red chillies, curry leaves and asafoetida and mix well.
  6. Pour this hot tempering over the mango mix and stir well until the mango pieces are well coated.
  7. Let it cool and store in a glass bottle / jar and keep it in the refrigerator...Serve with rice, biriyani etc..
