Tawa Mutton

Ingredients:
1/2 kg mutton, cut into pieces
1 medium onion, chopped
1 tbsp ginger-garlic paste
3 cardamoms
1 inch piece cinnamon
1 tbsp chopped ginger
1 tbsp chopped garlic
4 green chillies
3 medium tomatoes, chopped
1 tsp chilli powder
1 tsp coriander powder
1/4 tsp turmeric powder
1 tsp cumin powder
1/2 cup yogurt
1/2 tsp garam masala
2 tbsp lemon juice
chopped coriander leaves
1/4 cup fresh cream
salt to taste
3-4 tbsp ghee
Preparation:
- Heat 1 tbsp ghee in a pressure cooker and add cleaned mutton and fry for 2 minutes.
- Add cardamoms, cinnamon, chopped onion, ginger-garlic paste and salt and mix well. Add 1 cup of water to this and pressure cook till done.
- Heat 2-3 tbsp ghee / oil in a flat pan / tawa and add chopped ginger, garlic and green chillies and saute.
- Add chopped tomatoes and saute well till soft.
- Add chilli powder, coriander powder, turmeric powder and cumin powder and mix well.
- Add yogurt to this and mix well on low flame for 12-15 minutes.
- Add cooked mutton along with its stock as required and mix well.
- Adjust salt and add garam masala, lemon juice, chopped coriander leaves, fresh cream and cook for 5-7 minutes on low flame.
- Garnish with coriander leaves and serve....
