Ingredients:


3/4 cup tender coconut flesh / pulp

12-15 Marie / digestive biscuits

1 cup whipping cream

1/2 cup condensed milk (add as per sweetness)

sliced tender coconut pieces, to garnish


Preparation:


  1. Add tender coconut flesh in a blender and grind to a coarse paste and keep it aside.
  2. In a blender, add the biscuits and make a fine powder and keep it aside.
  3. In a bowl, add whipping cream and whip till soft peak is formed.
  4. Add tender coconut paste and condensed milk into this and gently mix until well combined.
  5. In small serving glasses / pudding dish, add a layer of biscuit powder and press gently.
  6. Top it with a layer of cream mixture and repeat the process with layers of biscuit powder and cream and finish it off with a layer of biscuit powder.
  7. Garnish with sliced tender coconut pieces and refrigerate for about 2-3 hours till set. Serve chilled..
