Ingredients:
3/4 cup tender coconut flesh / pulp
12-15 Marie / digestive biscuits
1 cup whipping cream
1/2 cup condensed milk (add as per sweetness)
sliced tender coconut pieces, to garnish
Preparation:
- Add tender coconut flesh in a blender and grind to a coarse paste and keep it aside.
- In a blender, add the biscuits and make a fine powder and keep it aside.
- In a bowl, add whipping cream and whip till soft peak is formed.
- Add tender coconut paste and condensed milk into this and gently mix until well combined.
- In small serving glasses / pudding dish, add a layer of biscuit powder and press gently.
- Top it with a layer of cream mixture and repeat the process with layers of biscuit powder and cream and finish it off with a layer of biscuit powder.
- Garnish with sliced tender coconut pieces and refrigerate for about 2-3 hours till set. Serve chilled..
