Unakka Chemmeen - Muringayila Choru / Dried Prawns - Drumstick Leaves Rice

Ingredients:
1 cup matta rice / parboiled rice
1/2 cup dried prawns / unakka chemmeen
1/2 cup drumstick leaves / muringayila
1/4 cup shallots
1/2 tsp turmeric powder
3 tsp kashmiri chilli powder
salt to taste
3 tbsp coconut oil
Preparation:
- Cook the rice adding enough water and salt and keep it aside.
- Crush together shallots, turmeric powder and kashmiri chilli powder and keep it aside.
- Heat oil in a pan and add the cleaned dried prawns and fry well.
- Add the crushed mixture and saute well till the raw smell goes.
- Add the drumstick leaves and saute for 2 minutes.
- Add the cooked rice and enough salt to this and mix well for 3-4 minutes. Switch off the flame and then serve..
