Ingredients:


3/4 cup vanpayar / red cow peas / red beans

2 raw plantains / pachakaya / kaya, peeled and chopped

1/2 tsp turmeric powder

salt to taste

3 garlic cloves

10 shallots

1- 1 1/2 tbsp chilli flakes / crushed red chillies

1 sprig curry leaves

2 tbsp coconut oil


Preparation:


  1. Wash and soak red cow peas / vanpayar in water overnight and then pressure cook it adding enough water, 1/4 tsp turmeric powder and salt until soft. Don’t overcook.
  2. In a pan, add chopped raw plantains and cook it covered adding 1/4 tsp turmeric powder, salt and enough water till done and keep it aside.
  3. Once both are cooked, combine them and simmer for 2-3 minutes and keep it aside.
  4. Crush garlic cloves and shallots together and keep it aside.
  5. Heat coconut oil in a pan and add crushed mixture and curry leaves and saute until golden brown.
  6. Reduce the flame to low and add chilli flakes and saute well till the raw smell disappears.
  7. Now add the cooked cow peas - plantain mixture and mix well and boil well for 2-3 minutes.
  8. Adjust the salt and switch off the flame. Serve with rice...
