Ingredients:
3/4 cup vanpayar / red cow peas / red beans
2 raw plantains / pachakaya / kaya, peeled and chopped
1/2 tsp turmeric powder
salt to taste
3 garlic cloves
10 shallots
1- 1 1/2 tbsp chilli flakes / crushed red chillies
1 sprig curry leaves
2 tbsp coconut oil
Preparation:
- Wash and soak red cow peas / vanpayar in water overnight and then pressure cook it adding enough water, 1/4 tsp turmeric powder and salt until soft. Don’t overcook.
- In a pan, add chopped raw plantains and cook it covered adding 1/4 tsp turmeric powder, salt and enough water till done and keep it aside.
- Once both are cooked, combine them and simmer for 2-3 minutes and keep it aside.
- Crush garlic cloves and shallots together and keep it aside.
- Heat coconut oil in a pan and add crushed mixture and curry leaves and saute until golden brown.
- Reduce the flame to low and add chilli flakes and saute well till the raw smell disappears.
- Now add the cooked cow peas - plantain mixture and mix well and boil well for 2-3 minutes.
- Adjust the salt and switch off the flame. Serve with rice...
