Ingredients:
3 potatoes, peeled and cubed
1 onion, sliced
small piece ginger, chopped
3 green chilli, slit
1 tomato, chopped
1/2 tsp turmeric powder
1 cup grated coconut
5 + 2 shallots, sliced
2 garlic cloves
1/2 tsp pepper corns
2 sprig curry leaves
1 tsp chilli powder
2 tsp coriander powder
1/2 tsp garam masala
salt to taste
1/2 tsp mustard seeds
2 tsp coconut oil
Preparation:
- Heat 1 tsp coconut oil in a pan and add pepper corns, garlic cloves, grated coconut, 5 shallots and few curry leaves and saute well till golden brown at medium flame.
- Then reduce the flame to low and add chilli powder, coriander powder and garam masala and mix well.
- Switch off the flame and keep it aside to cool and then grind to a smooth paste adding water and keep it aside.
- In a pan / clay pot, add cubed potatoes, sliced onion, ginger, green chillies, tomato, turmeric powder, salt and 2 cups of water and mix well and cook covered till done.
- Then add the ground coconut paste and mix well. Add water if required and allow to boil well.
- Adjust the salt and switch off the flame.
- Heat 1 tsp coconut oil in a pan and splutter mustard seeds. Add 2 sliced shallots and curry leaves and fry till brown.
- Pour this over the curry and mix well. Serve hot with dosa, chapati, appam etc...
