Ingredients:


3 potatoes, peeled and cubed

1 onion, sliced

small piece ginger, chopped

3 green chilli, slit

1 tomato, chopped

1/2 tsp turmeric powder

1 cup grated coconut

5 + 2 shallots, sliced

2 garlic cloves

1/2 tsp pepper corns

2 sprig curry leaves

1 tsp chilli powder

2 tsp coriander powder

1/2 tsp garam masala

salt to taste

1/2 tsp mustard seeds

2 tsp coconut oil


Preparation:


  1. Heat 1 tsp coconut oil in a pan and add pepper corns, garlic cloves, grated coconut, 5 shallots and few curry leaves and saute well till golden brown at medium flame.
  2. Then reduce the flame to low and add chilli powder, coriander powder and garam masala and mix well.
  3. Switch off the flame and keep it aside to cool and then grind to a smooth paste adding water and keep it aside.
  4. In a pan / clay pot, add cubed potatoes, sliced onion, ginger, green chillies, tomato, turmeric powder, salt and 2 cups of water and mix well and cook covered till done.
  5. Then add the ground coconut paste and mix well. Add water if required and allow to boil well.
  6. Adjust the salt and switch off the flame.
  7. Heat 1 tsp coconut oil in a pan and splutter mustard seeds. Add 2 sliced shallots and curry leaves and fry till brown.
  8. Pour this over the curry and mix well. Serve hot with dosa, chapati, appam etc...
