Ingredients:


3/4 cup basmati rice

3/4 cup grated coconut

1 cup vazhakoombu / banana flower, finely chopped

2 tsp ginger, finely chopped

1 green chilli, finely chopped

3 shallots, chopped

3/4 tsp turmeric powder

1/4 tsp asafoetida

salt to taste

3/4 tsp mustard seeds

1 tsp urad dal

1 tsp chana dal

2 dry red chillies

1 sprig curry leaves

2 tbsp coconut oil


Preparation:


  1. Wash and cook the rice in a deep pan adding about 4-5 cups of water and salt till done. Drain the water and keep it aside.
  2. Heat coconut oil in a pan and splutter mustard seeds. Add urad dal, chana dal, dry red chillies and curry leaves and saute on medium flame.
  3. Add chopped ginger, shallots and green chilli and saute well.
  4. Reduce the flame and add turmeric powder and asafoetida and saute for few seconds.
  5. Add finely chopped banana flower and salt and saute for 5 minutes.
  6. Add grated coconut and saute for a minute.
  7. Now add cooked rice and mix well and cook for 3-4 minutes on low flame. 
  8. Remove from the flame and serve hot...
