Ingredients:
3/4 cup basmati rice
3/4 cup grated coconut
1 cup vazhakoombu / banana flower, finely chopped
2 tsp ginger, finely chopped
1 green chilli, finely chopped
3 shallots, chopped
3/4 tsp turmeric powder
1/4 tsp asafoetida
salt to taste
3/4 tsp mustard seeds
1 tsp urad dal
1 tsp chana dal
2 dry red chillies
1 sprig curry leaves
2 tbsp coconut oil
Preparation:
- Wash and cook the rice in a deep pan adding about 4-5 cups of water and salt till done. Drain the water and keep it aside.
- Heat coconut oil in a pan and splutter mustard seeds. Add urad dal, chana dal, dry red chillies and curry leaves and saute on medium flame.
- Add chopped ginger, shallots and green chilli and saute well.
- Reduce the flame and add turmeric powder and asafoetida and saute for few seconds.
- Add finely chopped banana flower and salt and saute for 5 minutes.
- Add grated coconut and saute for a minute.
- Now add cooked rice and mix well and cook for 3-4 minutes on low flame.
- Remove from the flame and serve hot...
