Vegetable and Paneer Kurma

Ingredients:
1 cup paneer cubes
1 medium potato
1 medium carrot
8 beans, chopped
1/4 cup frozen peas
1/2 inch ginger, finely chopped
2 garlic cloves, finely chopped
1 medium onion, finely chopped
1 sprig curry leaves
2 green chillies, chopped
1/2 tsp fennel seeds
1/4 tsp turmeric powder
1 tsp coriander powder
1/2 tsp garam masala
1/2 cup grated coconut
10 cashew nuts
1/2 tsp pepper powder
2 tbsp coriander leaves, chopped
salt to taste
2 - 2 1/2 tbsp oil
Preparation:
- Peel and chop potato and carrot into small cubes.
- Grind grated coconut with cashew nuts and 1/2 cup water to a smooth paste and keep it aside.
- Heat oil in a pan and splutter fennel seeds.
- Add finely chopped ginger, garlic, onion and curry leaves and saute well at medium flame till onion gets cooked.
- Add chopped potato, carrot, beans, peas, green chillies and salt and mix well.
- Then add turmeric powder, coriander powder and garam masala and saute well at medium flame for a minute.
- Add 1 1/2 cup of water into this and allow to boil. Then cook covered for 7-8 minutes at low-medium flame.
- Add the ground paste and paneer cubes and mix well.
- Add 1/2 cup of hot water and boil for 2-3 minutes.
- Add pepper powder and chopped coriander leaves and mix well.
- Adjust the salt and switch off the flame. Serve hot...
