Watermelon Halwa

Ingredients:
5 cups watermelon pieces
3/4 cup sugar (add to your taste)
3/4 cup cornflour
1/4 cup ghee
1/2 tsp cardamom powder
3 tbsp cashew nuts, chopped
3 tbsp pistachios, chopped
Preparation:
- In a blender, add the chopped watermelon pieces and blend well without adding water. Strain the juice ( about 1 litre juice) and keep it aside.
- In a mixing bowl, add the watermelon juice, sugar and corn flour and mix well without any lumps.
- Transfer this to a thick bottomed pan and cook in high flame, stirring continuously for about 25-30 minutes.
- When it starts to thicken, reduce the flame to medium and add 1 tsp of ghee with an interval of 5 minutes and cook stirring continuously.
- When it separates from the pan. add cardamom powder and mix well.
- Add chopped cashew nuts and pistachios and mix well and switch off the flame.
- Transfer to a greased steel plate/ glass dish and level / flatten smoothly with a spoon.
