Ingredients:
1 1/2 cup self raising flour
125 gm butter, softened
1/2 cup cocoa powder
1/2 cup brown sugar
1/3 cup caster sugar
1 egg
1 tsp vanilla extract
1 cup white chocolate chips
Preparation:
- Preheat oven to 160 degree celcius. Line a baking sheet with baking paper/ parchment paper.
- In a bowl, sift together the flour and cocoa powder and keep it aside.
- In a large mixing bowl, cream together butter and sugars until light and fluffy.
- Add egg and vanilla extract and mix well until combined.
- Then add the flour mixture to the creamed mixture and mix gently, just until combined. Do not over mix.
- Gently fold in the white chocolate chips.
- Drop a tablespoon of cookie mixture on to the prepared baking sheet, two inches apart.
- Press the mixture down lightly using a spatula or back of spoon to flatten slightly.
- Bake in the preheated oven for about 12-15 minutes or until cooked.
- Remove from the oven and allow to cool for about 10 minutes on the baking sheet.
- Transfer them to a wire rack to cool completely..........
