Zucchini - Unakka Chemmeen / Dried Prawns Curry

Ingredients:

2 cup zucchini, peeled and cut into small cubes

1/4 cup dried prawns / unakka chemmeen

1 onion, sliced

2 green chillies, chopped

1 tsp ginger-garlic, crushed

1 big tomato, chopped

1 cup grated coconut

1 tsp cumin seeds

3 shallots

2 shallots, sliced

1 tsp turmeric powder

2 - 2 1/2 tsp chilli powder

salt to taste

3 tbsp coconut oil

1 tsp mustard seeds

2 dry red chillies

1 sprig curry leaves

Preparation:

  1. Peel and chop the zucchini into small cubes.
  2. Grind grated coconut, cumin seeds and 3 shallots together to a smooth paste and keep it aside.
  3. Heat 2 tbsp coconut oil in a clay pot / pan and add sliced onion, crushed ginger-garlic and green chillies and saute well adding salt.
  4. Add turmeric powder into this and mix well.
  5. Add chilli powder and mix well till raw smell goes.
  6. Add cleaned dried prawns and mix well for a minute. Add 1 cup of hot water into this and cook covered till done.
  7. Then add cubed zucchini and tomato and mix well and cook covered at low flame till done.
  8. Now add ground coconut paste and enough water and mix well and cook for 5 minutes at low flame. Adjust the salt and switch off the flame.
  9. Heat 1 tbsp oil in a small pan and splutter mustard seeds. Add 2 sliced shallots, dry red chillies and curry leaves and fry for a minute.
  10. Switch off and add a pinch of chilli powder and mix. Pour this over the curry and keep it covered till ready to serve….Mix well and serve hot with rice…
