Zucchini - Unakka Chemmeen / Dried Prawns Curry

Ingredients:
2 cup zucchini, peeled and cut into small cubes
1/4 cup dried prawns / unakka chemmeen
1 onion, sliced
2 green chillies, chopped
1 tsp ginger-garlic, crushed
1 big tomato, chopped
1 cup grated coconut
1 tsp cumin seeds
3 shallots
2 shallots, sliced
1 tsp turmeric powder
2 - 2 1/2 tsp chilli powder
salt to taste
3 tbsp coconut oil
1 tsp mustard seeds
2 dry red chillies
1 sprig curry leaves
Preparation:
- Peel and chop the zucchini into small cubes.
- Grind grated coconut, cumin seeds and 3 shallots together to a smooth paste and keep it aside.
- Heat 2 tbsp coconut oil in a clay pot / pan and add sliced onion, crushed ginger-garlic and green chillies and saute well adding salt.
- Add turmeric powder into this and mix well.
- Add chilli powder and mix well till raw smell goes.
- Add cleaned dried prawns and mix well for a minute. Add 1 cup of hot water into this and cook covered till done.
- Then add cubed zucchini and tomato and mix well and cook covered at low flame till done.
- Now add ground coconut paste and enough water and mix well and cook for 5 minutes at low flame. Adjust the salt and switch off the flame.
- Heat 1 tbsp oil in a small pan and splutter mustard seeds. Add 2 sliced shallots, dry red chillies and curry leaves and fry for a minute.
- Switch off and add a pinch of chilli powder and mix. Pour this over the curry and keep it covered till ready to serve….Mix well and serve hot with rice…
