Kums / Mutta Pola

                                 ‘ Kums’ is a soft and spongy textured cake prepared using eggs and plain flour with cardamon flavour. It is very popular in  Malabar area.Can be served as a tea-time snack.

My brother Sabi’s favourite.

Ingredients:

4 eggs
9-10 tbsp sugar
8 tbsp plain flour (maida)
1/2 tsp cardamon powder
ghee for greasing the pan

Preparation:

  1. In a bowl, beat together eggs, sugar and cardamon powder on high speed for about 10-15 minutes.
  2. Then add plain flour into it and mix together without any lumps.
  3. Grease a deep bottomed non stick pan with ghee, pour the mixture, cover and cook in low flame for about 15-20 minutes or when the knife or fork  inserted in the center comes out clean. Switch off the flame.
  4. Heat another frying pan,grease with little ghee and turn the cake upside down into this pan and cook for another 5 minutes. Cut and serve with tea.
