Rava Muttayappam / Mutta Surka

Ingredients:
1 cup rava / semolina
2 tbsp aval / beaten rice flakes, soaked in little water
3/4 cup grated coconut
1 egg
salt to taste
oil, for frying
Preparation:
- In a bowl, add rava, soaked aval and 1 cup of water and mix well and keep it covered for 15 minutes.
- Add grated coconut, egg, salt and enough water into this and mix well.
- Then transfer to a blender and grind well to a smooth semi thick batter. It should have a pourable consistency.
- Transfer the batter to a bowl and keep it covered for 20 minutes.
- Heat oil in a deep frying pan and pour a ladle of batter and allow to cook at medium flame.
- When puffed up, flip it to other side and fry till it turns light golden brown colour.
- Serve hot with any spicy curry of your choice…
