Ingredients:
250 gm achinga payar / long beans
1/4 cup cherupayar / green gram ( 1/2-3/4 cup cooked )
1/2 onion, chopped
1/2 cup grated coconut
1/4 tsp cumin seeds
1/4 tsp turmeric powder
2 big green chillies
1 garlic clove
1/2 tsp mustard seeds
2 dry red chillies
1 sprig curry leaves
1 tbsp coconut oil
Preparation:
- Soak green gram in water overnight and pressure cook it adding enough water and salt. Drain the water and keep it aside.
- Wash and chop the long beans into small pieces.
- Heat oil in a pan and splutter mustard seeds and add dry red chillies and curry leaves.
- Add chopped onion and saute till soft.
- Add chopped long beans and mix well. Add salt and 3 tbsp water and mix well and cook covered at low flame.
- In the meantime, grind grated coconut, cumin seeds, turmeric powder, green chillies and garlic together to a coarse mixture.
- Then add cooked green gram and coconut mixture and mix well and cook covered at low flame for 2-3 minutes.
- Open the lid and mix well for a minute. Remove from the flame and serve with rice...
