Asparagus Stir Fry / Mezhukkupuratti

Ingredients:

a bunch of asparagus

5-6 shallots, crushed

2 garlic cloves, crushed

1 sprig  curry leaves

1 1/2-2 tsp chilli flakes

1/4 tsp turmeric powder

salt to taste

1 tbsp oil

Preparation:

  1. Wash and chop asparagus into pieces and keep it aside.
  2. Heat oil in a pan and add crushed shallots, garlic and curry leaves and saute for a minute.
  3. Add chilli flakes and saute again for 2 minutes till the raw smell goes.
  4. Then add asparagus pieces, turmeric powder and salt and mix well.
  5. Sprinkle little water and cook covered at low flame, stirring occasionally till the asparagus are cooked well and the water completely dries up.
  6. Remove from the flame and serve hot with rice…
