Ingredients:


1 ripe avocado

1 cucumber, grated

1 cup thick and creamy yogurt

1 garlic clove, grated or finely minced

4-5 mint leaves, finely chopped

1/2-1 tbsp lemon juice

1-2 tbsp olive oil

salt to taste


For Garnish:

pomegranate seeds

parsley leaves, chopped


Preparation:


  1. Place the grated cucumber on a muslin cloth and squeeze out all the excess water and keep it aside.
  2. Cut avocado in half, remove the seed and scoop the flesh onto a plate or bowl.
  3. Add lemon juice and salt and mash the avocado until smooth using a fork or spoon.
  4. Add grated cucumber, minced garlic and chopped mint leaves over the mashed avocado.
  5. Add yogurt and gently mix everything together until well combined.
  6. Drizzle olive oil over the dip and top it with pomegranate seeds and sprinkle some chopped parsley.
  7. Serve with pita bread, grilled chicken or as a dip for crackers, vegetables like carrots, cucumbers etc...
