Ingredients:
1 ripe avocado
1 cucumber, grated
1 cup thick and creamy yogurt
1 garlic clove, grated or finely minced
4-5 mint leaves, finely chopped
1/2-1 tbsp lemon juice
1-2 tbsp olive oil
salt to taste
For Garnish:
pomegranate seeds
parsley leaves, chopped
Preparation:
- Place the grated cucumber on a muslin cloth and squeeze out all the excess water and keep it aside.
- Cut avocado in half, remove the seed and scoop the flesh onto a plate or bowl.
- Add lemon juice and salt and mash the avocado until smooth using a fork or spoon.
- Add grated cucumber, minced garlic and chopped mint leaves over the mashed avocado.
- Add yogurt and gently mix everything together until well combined.
- Drizzle olive oil over the dip and top it with pomegranate seeds and sprinkle some chopped parsley.
- Serve with pita bread, grilled chicken or as a dip for crackers, vegetables like carrots, cucumbers etc...
