Badam Kachiyathu ( Almond Drink )

Ingredients:
20-25 almonds / badam
3 cups milk
3 tbsp sugar (adjust to your taste)
a pinch of salt
1/4 tsp cardamom powder
2 shallots, sliced
2 tsp ghee
Preparation:
- Soak the almonds in hot water for 30 minutes. Then peel off the skin and grind to a very fine paste adding 1/2 cup of milk.
- Transfer to a bowl and add 1/2 cup of milk to this paste and mix well.
- Heat ghee in a sauce pan and add sliced shallots and saute well till brown.
- Then add 2 cups of milk and almond paste and mix well and cook at low flame for 4-5 minutes, stirring continuously.
- Add sugar and a pinch of salt and mix well and bring to a boil.
- Reduce the flame to low and boil for another 2-3 minutes.
- Add cardamom powder and mix well. Switch off the flame and serve hot...
