Banana Spring Roll

Ingredients:
spring roll sheets, as required ( frozen store brought, small size )
2 ripe bananas / nendrapazham
2 tbsp sugar
1/2 - 3/4 cup grated coconut
8-10 cashew nuts, chopped
1 tbsp ghee / oil
2 tbsp plain flour
3 tbsp water
oil, for frying
Preparation:
- Heat a tbsp of oil / ghee in a pan over medium flame and add chopped bananas and sugar and stir fry till the banana turns soft and starts to caramelize.
- Add chopped cashew nuts and grated coconut and stir well until everything is slightly golden.
- Remove it from the flame and keep it aside to cool.
- In a bowl, add 2 tbsp plain flour and 3 tbsp water and make smooth thick paste and keep it aside.
- Place a spring roll sheet on a flat surface and add a heaped tablespoon of the banana filling at the one edge of the sheet.
- Fold the sides in and then roll tightly to form a cylindrical shape. Seal the edges with the flour paste.
- Repeat the same with remaining sheets and banana filling.
- Heat oil in a pan and fry the spring rolls in batches on medium flame until golden brown and crispy. Serve with tea/ coffee..
