Ingredients:


spring roll sheets, as required ( frozen store brought, small size )

2 ripe bananas / nendrapazham

2 tbsp sugar

1/2 - 3/4 cup grated coconut

8-10 cashew nuts, chopped

1 tbsp ghee / oil

2 tbsp plain flour

3 tbsp water

oil, for frying


Preparation:


  1. Heat a tbsp of oil / ghee in a pan over medium flame and add chopped bananas and sugar and stir fry till the banana turns soft and starts to caramelize.
  2. Add chopped cashew nuts and grated coconut and stir well until everything is slightly golden.
  3. Remove it from the flame and keep it aside to cool.
  4. In a bowl, add 2 tbsp plain flour and 3 tbsp water and make smooth thick paste and keep it aside.
  5. Place a spring roll sheet on a flat surface and add a heaped tablespoon of the banana filling at the one edge of the sheet.
  6. Fold the sides in and then roll tightly to form a cylindrical shape. Seal the edges with the flour paste.
  7. Repeat the same with remaining sheets and banana filling.
  8. Heat oil in a pan and fry the spring rolls in batches on medium flame until golden brown and crispy. Serve with tea/ coffee..
