Beef Choru / Malabar Beef Rice

Ingredients:
1 kg beef, cut into pieces
3 cups jeerakasala rice / kaima rice
4 onions + 1 onion, sliced
2 tbsp ginger-garlic paste
5-6 green chilli ( 2 tbsp ), crushed
2 big / 3 medium tomatoes, chopped
1 tsp coriander powder
1 tsp chilli powder
1/2 tsp turmeric powder
1 tsp pepper powder
1/2 tsp garam masala
1/2 tsp fennel powder
1 tsp meat masala
1/4 cup coriander leaves
2-3 tbsp mint leaves
1 sprig curry leaves
2 piece cinnamon
4-5 cloves
4 cardamoms
1 tbsp lemon juice
salt to taste
2 tbsp + 2 tbsp ghee
2 tbsp + 2 tbsp oil
Preparation:
- Heat 2 tbsp ghee and 2 tbsp oil in a pressure cooker and add cardamoms, cloves and cinnamon and saute.
- Add 4 sliced onions and salt and saute well.
- Add ginger-garlic paste and green chilli paste and saute well till raw smell goes.
- Add chopped tomatoes and saute well till soft.
- Add coriander powder, chilli powder, turmeric powder, pepper powder, garam masala, fennel powder and meat masala and saute well.
- Add cleaned beef into this and mix well.
- Add coriander leaves, mint leaves, curry leaves and 1 cup of water and mix well and pressure cook till done.
- Separate the beef stock from the cooked beef and keep it aside for cooking the rice.
- Heat 2 tbsp ghee and 2 tbsp oil in a thick bottomed pan and add cardamoms, cloves, cinnamon and 1 sliced onion and saute.
- Add drained rice and saute for 4-5 minutes.
- Add beef stock and water ( total 6 cups ), salt and lemon juice and mix well and cook covered on low flame till the water is absorbed by the rice.
- Then add the cooked beef to the rice, mix slowly and cook covered on low flame till rice is done.
- Add chopped coriander leaves and mix well. Remove from flame and serve hot with raita and pickle...
