Beef Choru / Malabar Beef Rice

Ingredients:


1 kg beef, cut into pieces

3 cups jeerakasala rice / kaima rice

4 onions + 1 onion, sliced

2 tbsp ginger-garlic paste

5-6 green chilli ( 2 tbsp ), crushed

2 big / 3 medium tomatoes, chopped

1 tsp coriander powder

1 tsp chilli powder

1/2 tsp turmeric powder

1 tsp pepper powder

1/2 tsp garam masala

1/2 tsp fennel powder

1 tsp meat masala

1/4 cup coriander leaves

2-3 tbsp mint leaves

1 sprig curry leaves

2 piece cinnamon

4-5 cloves

4 cardamoms

1 tbsp lemon juice

salt to taste

2 tbsp + 2 tbsp ghee

2 tbsp + 2 tbsp oil


Preparation:


  1. Heat 2 tbsp ghee and 2 tbsp oil in a pressure cooker and add cardamoms, cloves and cinnamon and saute.
  2. Add 4 sliced onions and salt and saute well.
  3. Add ginger-garlic paste and green chilli paste and saute well till raw smell goes.
  4. Add chopped tomatoes and saute well till soft.
  5. Add coriander powder, chilli powder, turmeric powder, pepper powder, garam masala, fennel powder and meat masala and saute well.
  6. Add cleaned beef into this and mix well.
  7. Add coriander leaves, mint leaves, curry leaves and 1 cup of water and mix well and pressure cook till done.
  8. Separate the beef stock from the cooked beef and keep it aside for cooking the rice.
  9. Heat 2 tbsp ghee and 2 tbsp oil in a thick bottomed pan and add cardamoms, cloves, cinnamon and 1 sliced onion and saute.
  10. Add drained rice and saute for 4-5 minutes.
  11. Add beef stock and water ( total 6 cups ), salt and lemon juice and mix well and cook covered on low flame till the water is absorbed by the rice.
  12. Then add the cooked beef to the rice, mix slowly and cook covered on low flame till rice is done.
  13. Add chopped coriander leaves and mix well. Remove from flame and serve hot with raita and pickle...
