Ingredients:
8-10 ladle of thick dosa batter
1 tbsp dried butterfly pea flowers ( Shankupushpam )
salt to taste
oil, as required
Preparation:
- Take dried butterfly pea flowers in a bowl and add 1 cup of hot water and keep it covered for 10 minutes until the water turns a deep blue.
- Strain the water to remove the flowers and keep it aside to cool.
- Add this blue water as required to the dosa batter and mix well. Adjust the salt.
- Heat a dosa tawa/ pan and lightly grease with oil.
- Pour a ladle full of batter in the centre and using the back of the ladle spread as concentric circles.
- Drizzle 1/2 tsp of oil over the dosa and cook till crispy. Turn the other side and cook if required.
- Serve hot with chutney or sambar...
