Ingredients:
2 cups idli batter
1 tbsp dried butterfly pea flowers ( Shankupushpam )
salt to taste
Preparation:
- Take dried butterfly pea flowers in a bowl and add 1 cup of hot water and keep it covered for 10 minutes until the water turns a deep blue.
- Strain the water to remove the flowers and keep it aside to cool.
- Add this blue water as required to the idli batter and mix well. Check for salt and add if required.
- In an idli cooker/ steamer , take enough water and allow to boil.
- Grease the idli moulds with little oil and pour the batter in the moulds.
- Place them in the steamer, close with a tight lid and steam cook on medium flame for about 15 minutes or until idlis get cooked well.
- Remove from the flame and allow to cool. Then remove the idlis from the moulds using the spoon and serve with sambar/ chutney...
