Ingredients:


4 eggs

1 cup cooked white chickpeas

3 large tomatoes

1 large onion, finely chopped

1 tsp garlic, finely chopped

1 small capsicum, chopped

1 1/4 tsp kashmiri chilli powder / paprika

1/2 tsp pepper powder

3/4 tsp cumin powder

1/4 tsp garam masala

salt to taste

2 tbsp oil

1 tbsp finely chopped fresh coriander leaves / parsley leaves, to garnish


Preparation:


  1. In a blender, add the chopped tomatoes and make a puree and keep it aside.
  2. Heat oil in a pan on medium flame and add finely chopped onion and garlic and saute for 3-4 minutes until it becomes transparent.
  3. Add chopped capsicum and saute for a minute.
  4. Add tomato puree and 1/2 cup of water and mix well for 3-4 minutes.
  5. Add kashmiri chilli powder,/ paprika, pepper powder and salt and mix well.
  6. Add cumin powder and garam masala and mix well.
  7. Add 1 cup cooked chickpeas, mix well and cook covered for 8-10 minutes on low flame.
  8. Then make 4 holes / indentations in the mixture using a spatula or a spoon.
  9. Carefully crack the eggs into the holes one at a time and sprinkle some salt and pepper over the eggs.
  10. Cover and cook at low-medium flame for 5-7 minutes until the egg whites are set, but yolks are still runny.
  11. Remove from the flame and garnish with chopped coriander / parsley leaves and serve..
