Egg Fried Idiyappam

Ingredients:
2 garlic cloves, finely chopped
1 small onion, chopped
3 tbsp carrot, chopped
3 tbsp beans, chopped
3 tbsp capsicum, chopped
1-2 eggs, beaten
1 tsp tomato sauce
1/2 tsp light soy sauce
pepper powder, to taste
salt to taste
2-3 tbsp spring onion, chopped
1 1/2 tbsp oil
Preparation:
- Shred the idiyappams into pieces using hand and keep it aside.
- Heat oil in a pan and add chopped garlic, onion, capsicum, carrot, beans and salt and saute for 2 minutes.
- Then move everything to the side of the pan and add the beaten egg and scramble well. Now mix everything well.
- Add tomato sauce, soy sauce and pepper powder and mix well.
- Add shredded idiyappam little by little and stir well for 2 minutes.
- Adjust the salt and switch off the flame. Garnish with chopped spring onion and serve…
