Egg Fried Idiyappam

Ingredients:

6 idiyappams

2 garlic cloves, finely chopped

1 small onion, chopped

3 tbsp carrot, chopped

3 tbsp beans, chopped

3 tbsp capsicum, chopped

1-2 eggs, beaten

1 tsp tomato sauce

1/2 tsp light soy sauce

pepper powder, to taste

salt to taste

2-3 tbsp spring onion, chopped

1 1/2 tbsp oil

Preparation:

  1. Shred the idiyappams into pieces using hand and keep it aside.
  2. Heat oil in a pan and add chopped garlic, onion, capsicum, carrot, beans and salt and saute for 2 minutes.
  3. Then move everything to the side of the pan and add the beaten egg and scramble well. Now mix everything well.
  4. Add tomato sauce, soy sauce and pepper powder and mix well. 
  5. Add shredded idiyappam little by little and stir well for 2 minutes.
  6. Adjust the salt and switch off the flame. Garnish with chopped spring onion and serve…
