Moodi Pathal / Malabar Rice Pancakes

Ingredients:
2 cups raw rice / pachari
1 cup cooked rice / choru
1 cup grated coconut
salt to taste
water, as required
Preparation:
- Wash and soak the rice in water for 2 -3 hours.
- In a blender, add the drained rice, cooked rice, grated coconut and enough water and grind together to a batter. Don't make too loose batter.
- Add salt to this and mix well.
- Heat a cast iron pan ( dosa pan ) and grease it with little oil.
- Pour a ladleful of batter into the pan and spread it in a circular motion.
- Cover with a lid and cook on medium flame for about 2 minutes. Transfer to a plate and repeat the same process with the remaining batter.
- Serve hot with any veg / non-veg curry...
