Ingredients:
3-4 eggs
1 small onion, sliced
3 green chillies
1 sprig curry leaves
1 small tomato, chopped
1 cup grated coconut
1/2 tsp turmeric powder
1/2-3/4 tsp fennel seeds
salt to taste
2 tbsp coconut oil
Preparation:
- Heat coconut oil in a pan / clay pot and add sliced onion and 2 slit green chillies and saute well adding little salt.
- Add chopped tomato and mix well and cook covered till it becomes soft and mushy.
- Grind grated coconut with turmeric powder, 1 green chilli and fennel seeds to a smooth paste adding little water.
- Add the ground coconut paste, salt and enough water and allow to boil on medium-low flame.
- Then crack in eggs and add curry leaves and cook covered till done. Serve with pathiri, orotti etc...
