Ingredients:


3-4 eggs

1 small onion, sliced

3 green chillies

1 sprig curry leaves

1 small tomato, chopped

1 cup grated coconut

1/2 tsp turmeric powder

1/2-3/4 tsp fennel seeds

salt to taste

2 tbsp coconut oil


Preparation:


  1. Heat coconut oil in a pan / clay pot and add sliced onion and 2 slit green chillies and saute well adding little salt.
  2. Add chopped tomato and mix well and cook covered till it becomes soft and mushy.
  3. Grind grated coconut with turmeric powder, 1 green chilli and fennel seeds to a smooth paste adding little water.
  4. Add the ground coconut paste, salt and enough water and allow to boil on medium-low flame.
  5. Then crack in eggs and add curry leaves and cook covered till done. Serve with pathiri, orotti etc...
