Ingredients:
2 cup ripe pineapple, chopped into small pieces
1 medium ripe plantain / ethapazham / nendra pazham, chopped into pieces
10-12 seedless black / red grapes
1 tsp chilli powder
3/4-1 tsp turmeric powder
3/4 cup grated coconut
1/2 tsp cumin seeds
2 green chillies
1/2 cup yoghurt
1-2 tsp sugar
1/2 tsp + 1/2 tsp mustard seeds
2 dry red chillies
1 sprig curry leaves
salt to taste
1 tbsp coconut oil
Preparation:
- In a thick bottomed pan, add chopped pineapple, chilli powder, turmeric powder, salt and 3/4 cup of water and mix well and cook covered until soft.
- Then add chopped ripe plantain and cook for another 2-3 minutes until just soft.
- Grind together grated coconut, green chillies, 1/2 tsp mustard seeds and cumin seeds to a smooth paste adding 3-4 tbsp water.
- Add the ground coconut paste to the cooked pineapple - plantain mixture and mix well and cook for 4-5 minutes at medium-low flame.
- Add grapes into this and mix well.
- Then add beaten yoghurt and mix well. Add sugar and adjust the salt and mix everything well and switch off the flame.
- Heat coconut oil in a pan and splutter 1/2 tsp mustard seeds and add dry red chillies and curry leaves.
- Add this seasoning to the pachadi and mix well. Serve with rice....
