Pineapple Madhura Curry

Ingredients:
1/2 pineapple
1/2 tsp turmeric powder
1 tsp kashmiri chilli powder
1 cup grated coconut
5 tbsp jaggery powder
salt to taste
1 tsp mustard seeds
3 dry red chillies
1 sprig curry leaves
25 gm cashew nuts
25 gm raisins
2 tbsp ghee
Preparation:
- Peel and chop the pineapple into pieces and keep it aside.
- Grind grated coconut to a smooth paste adding little water and keep it aside.
- In a pan, add pineapple pieces and cook it adding turmeric powder, kashmiri chilli powder and enough water till the water dries and the pineapple is cooked well.
- Remove it from the flame and allow it to cool and then grind to a smooth paste.
- Transfer this pineapple paste to a pan and add little water (add little water to the mixie jar and rinse and add this) and mix well.
- Add jaggery powder and salt and mix well and cook till it slightly thickens.
- Then add coconut paste and mix well for 2-3 minutes. Adjust the salt and switch off the flame.
- Heat ghee in a pan and splutter mustard seeds. Add dry red chillies, curry leaves, cashew nuts and raisins and saute well.
- Add this to the curry and mix well. Serve as a side dish...
