pineapple-madhura-curry

Ingredients:


1/2 pineapple

1/2 tsp turmeric powder

1 tsp kashmiri chilli powder

1 cup grated coconut

5 tbsp jaggery powder

salt to taste

1 tsp mustard seeds

3 dry red chillies

1 sprig curry leaves

25 gm cashew nuts

25 gm raisins

2 tbsp ghee


Preparation:


  1. Peel and chop the pineapple into pieces and keep it aside.
  2. Grind grated coconut to a smooth paste adding little water and keep it aside.
  3. In a pan, add pineapple pieces and cook it adding turmeric powder, kashmiri chilli powder and enough water till the water dries and the pineapple is cooked well.
  4. Remove it from the flame and allow it to cool and then grind to a smooth paste.
  5. Transfer this pineapple paste to a pan and add little water (add little water to the mixie jar and rinse and add this) and mix well.
  6. Add jaggery powder and salt and mix well and cook till it slightly thickens.
  7. Then add coconut paste and mix well for 2-3 minutes. Adjust the salt and switch off the flame.
  8. Heat ghee in a pan and splutter mustard seeds. Add dry red chillies, curry leaves, cashew nuts and raisins and saute well.
  9. Add this to the curry and mix well. Serve as a side dish...
