Pineapple Puli Inji ( Inji Puli)

Ingredients:
1 cup pineapple, finely chopped
2 tbsp ginger, finely chopped
4-5 green chillies, finely chopped
lemon sized tamarind
2 dried red chillies
1/4 tsp turmeric powder
1/2 tsp chilli powder
1 tsp jaggery / sugar
curry leaves
3/4 tsp mustard seeds
a pinch of fenugreek seeds
salt to taste
2 tbsp coconut oil
Preparation:
- Cut pineapple into fine pieces. Soak tamarind in 1/2 cup of water, extract its juice and keep it aside.
- Heat oil in a pan and splutter mustard seeds and fenugreek seeds.
- Add curry leaves, dried red chillies, chopped ginger and green chillies and saute till golden.
- Add turmeric powder, chilli powder and chopped pineapple, mix well and cook for 10 minutes till soft.
- Add tamarind extract and salt and mix well. Add little water and jaggery and cook covered for 15 minutes till it thickens.
- Remove from the flame and serve with rice....
