Ingredients:
2 cups idli batter (or as required)
3 potatoes, boiled and mashed
1 small onion, finely chopped
1/2 inch ginger (1 tsp), finely chopped
2 green chillies, finely chopped
1 sprig curry leaves, chopped
1/2 tsp turmeric powder
a pinch of asafoetida
2 tbsp coriander leaves, chopped
1 tsp mustard seeds
1/2 tsp cumin seeds
1 tsp chana dal
salt to taste
1 tbsp oil
Preparation:
- Heat 1 tbsp oil in a pan and splutter mustard seeds, cumin seeds and chana dal.
- Add chopped onion, green chillies, ginger and curry leaves and saute till the onion turns soft.
- Add the turmeric powder, asafoetida and salt and saute for few seconds.
- Then add mashed potatoes and mix well and cook for few minutes.
- Add chopped coriander leaves and mix well.
- Remove from the flame and keep it aside to cool.
- Grease the idli plates, pour 1/4 of the plate with idli batter and add 1 tbsp of potato masala at the centre.
- Then cover the potato masala with idli batter.
- Place them in the steamer, close with a tight lid and steam cook for 12-15 minutes or until idlis get cooked well.
- Remove from the flame and allow to cool. Then remove the idlis from the plates using the spoon and serve....
