Ingredients:


2 cups idli batter (or as required)

3 potatoes, boiled and mashed

1 small onion, finely chopped

1/2 inch ginger (1 tsp), finely chopped

2 green chillies, finely chopped

1 sprig curry leaves, chopped

1/2 tsp turmeric powder

a pinch of asafoetida

2 tbsp coriander leaves, chopped

1 tsp mustard seeds

1/2 tsp cumin seeds

1 tsp chana dal

salt to taste

1 tbsp oil


Preparation:


  1. Heat 1 tbsp oil in a pan and splutter mustard seeds, cumin seeds and chana dal.
  2. Add chopped onion, green chillies, ginger and curry leaves and saute till the onion turns soft.
  3. Add the turmeric powder, asafoetida and salt and saute for few seconds.
  4. Then add mashed potatoes and mix well and cook for few minutes.
  5. Add chopped coriander leaves and mix well.
  6. Remove from the flame and keep it aside to cool.
  7. Grease the idli plates, pour 1/4 of the plate with idli batter and add 1 tbsp of potato masala at the centre.
  8. Then cover the potato masala with idli batter.
  9. Place them in the steamer, close with a tight lid and steam cook for 12-15 minutes or until idlis get cooked well.
  10. Remove from the flame and allow to cool. Then remove the idlis from the plates using the spoon and serve....
