Pressure Cooker Ghee Rice / Neychoru

Ingredients:
2 cups jeerakasala rice / kaima rice
1/2 onion, sliced
3 cardamoms
3-4 cloves
2 pieces of cinnamon
3 cups of water
salt to taste
1 tbsp lemon juice
2 tbsp ghee
1 tbsp oil
For Garnishing:
2 tbsp ghee
1 tbsp oil
1 small onion, thinly sliced
few raisins and cashews
1 tbsp coriander leaves, chopped
Preparation:
- Wash the rice well until you get clear water, drain the water and keep it aside.
- Heat a pressure cooker and add 2 tbsp ghee and 1 tbsp oil and 1/2 sliced onion and saute well till transparent.
- Add cardamoms, cloves and cinnamon and mix well.
- Add 3 cups of water , salt and lemon juice and mix well.
- Add the drained rice and mix well and pressure cook it at medium flame for 2 whistles. Keep it aside for 10-15 minutes.
- In the meantime, heat 2 tbsp ghee in a pan and fry the raisins and cashew nuts and keep it aside. Add 1 tbsp oil into the same pan and fry 1 small sliced onion and fry until golden.
- Once the pressure releases, open the cooker and gently mix the rice.
- Transfer the rice to a serving plate and garnish with fried onions, cashew nuts, raisins and chopped coriander leaves.. Serve with chicken/ mutton or beef curry...
