Ingredients:
2 cups rava / semolina
1 cup white rice flakes / aval
1/2 cup grated coconut
1 tsp yeast
1 tbsp sugar
1 tsp salt
Preparation:
- Soak the rava and white rice flakes / aval in 2 1/2 cups of water for 5 minutes.
- Then transfer this to a mixie jar and add grated coconut, yeast, sugar, salt and 1 cup of water and grind together to a smooth batter.
- Pour the batter into a large bowl and keep it covered for fermentation for 1-2 hours till it doubles. Mix the fermented batter well.
- Heat an appachatti on medium flame and grease it with little oil.
- Pour a ladleful of batter to the pan and rotate the pan in a circular manner.
- Cover with a lid and cook on low flame till the appam is cooked well and the edges start turning brown.
- Remove the appam from the pan and transfer it to a plate. Repeat the same with the remaining batter..Serve with any curry of your choice...
