Red Beans / Vanpayar Ularthiyathu

Ingredients:
1 cup red beans / red cow peas / vanpayar
8 shallots, crushed
3-4 garlic cloves, crushed
2 sprig curry leaves
1/2 tsp chilli powder
1-1 1/2 tsp chilli flakes
salt to taste
1 tsp mustard seeds
1 tbsp coconut oil
Preparation:
- Soak red beans / vanpayar in water overnight and then pressure cook it adding enough water and salt until soft. Don’t overcook. Drain the excess water and keep it aside.
- Heat coconut oil in a pan over medium flame and splutter mustard seeds.
- Add crushed garlic, shallots and curry leaves and saute well until the shallots turn soft.
- Reduce the flame to low and add chilli powder and chilli flakes and saute for a minute.
- Add cooked beans to the pan and stir well to combine.
- Adjust the salt and roast on low flame for 3-4 minutes, stirring continuously.
- Garnish with curry leaves and serve with rice...
- Adjust the spice level to your taste...
