Red Beans / Vanpayar Ularthiyathu

Ingredients:


1 cup red beans / red cow peas / vanpayar

8 shallots, crushed

3-4 garlic cloves, crushed

2 sprig curry leaves

1/2 tsp chilli powder

1-1 1/2 tsp chilli flakes

salt to taste

1 tsp mustard seeds

1 tbsp coconut oil


Preparation:


  1. Soak red beans / vanpayar in water overnight and then pressure cook it adding enough water and salt until soft. Don’t overcook. Drain the excess water and keep it aside.
  2. Heat coconut oil in a pan over medium flame and splutter mustard seeds.
  3. Add crushed garlic, shallots and curry leaves and saute well until the shallots turn soft.
  4. Reduce the flame to low and add chilli powder and chilli flakes and saute for a minute.
  5. Add cooked beans to the pan and stir well to combine.
  6. Adjust the salt and roast on low flame for 3-4 minutes, stirring continuously.
  7. Garnish with curry leaves and serve with rice...
  • Adjust the spice level to your taste...
