Ingredients:
2 semi ripe plantains/ nendrapazham / kerala bananas
1/4 cup grated coconut
3-4 tbsp sugar
1 tbsp cashew nuts, chopped
2 tsp raisins
1/4 tsp cardamom powder
2 tbsp ghee
oil for frying
Preparation:
- Cut the bananas/ plantains into pieces and steam cook until it turns soft.
- Remove its skin and mash/ grind into smooth dough without adding water and keep it aside.
- Heat ghee in a pan and fry chopped cashew nuts and raisins.
- Add grated coconut and saute for 2-3 minutes.
- Add sugar and cardamom powder and mix well.
- Remove it from the flame and keep it aside to cool.
- Lightly oil the palm and take a small ball of banana dough and flatten it on your palm.
- Place a spoon of coconut filling in the middle, cover it and roll it into a ball.
- Heat oil in a pan and fry the prepared banana balls till golden color...Serve with tea or coffee :)
