Malabar Beef Kuruma / Kurma

Ingredients:

600-700 gm beef, cut into pieces

3/4 cup shallots, sliced

3 green chillies, slit

1 1/2 tbsp ginger-garlic paste

1 tbsp coriander powder

3/4 tsp pepper powder

1/2 tsp chilli powder

1/2 tsp + 1/2 tsp garam masala

1 small tomato, chopped

1 1/2 tbsp yogurt

1 1/2 tbsp mint leaves

1 1/2 tbsp coriander leaves

8 cashew nuts, soaked in hot water for 30 minutes

1 1/2 tbsp grated coconut

1/4 cup thick coconut milk

4 shallots, thinly sliced

2 tbsp cashew nuts

1 tbsp raisins

salt to taste

1 1/2 tbsp + 2 tsp coconut oil

Preparation:

  1. Heat 1 1/2 tbsp coconut oil in a pressure cooker over medium flame and add sliced shallots and green chillies and saute till shallots turn transparent adding a pinch of salt.
  2. Add ginger-garlic paste and saute till raw smell disappears.
  3. Add coriander powder, pepper powder, chilli powder and1/2 tsp garam masala and mix well for a minute over low flame.
  4. Add chopped tomato and cook for 2 minutes.
  5. Add yogurt into this, mix well and cook for few minutes.
  6. Now add cleaned beef, chopped mint leaves, coriander leaves and salt, mix well and cook for 3-4 minutes.
  7. Then add 1/2 cup of hot water and mix well and pressure cook for 6-7 whistles until the beef turn soft and cooked.
  8. In the meantime, grind 8 soaked cashew nuts and grated coconut to a fine paste adding 2 tbsp water.
  9. Add this paste to the beef curry and cook for few minutes over low flame.
  10. Add 1/2 tsp garam masala and coconut milk and cook for 2 minutes at low flame. Switch off the flame.
  11. Heat 2 tsp coconut oil in a small pan and fry 4 thinly sliced shallots till light golden.
  12. Add 2 tbsp cashew nuts and raisins and fry till shallots turn golden brown.
  13. Pour this over the beef curry and keep it covered for 10-15 minutes.
  14. Mix gently and serve with ghee rice, neer dosa, pathiri, porotta etc..
