Ingredients:
1 cup raw rice / pachari
2 tbsp cooked rice
1/2 tsp cumin seeds
3 cardamoms
1/4 tsp salt
250 gm jaggery / 1 cup grated jaggery
1/4 tsp baking soda
2 tbsp coconut slices/ thenga kothu
5-6 shallots, sliced
2 tbsp coconut oil
Preparation:
- Wash and soak the raw rice in water for 3-4 hours.
- In a blender, add drained rice, cooked rice, cumin seeds, cardamoms, salt and 1/2 cup of water and grind together to a smooth batter and transfer the batter to a bowl.
- In a pan, melt the jaggery adding 1/2 cup of water and strain this hot jaggery syrup to the batter and mix well.
- Add baking soda and mix well.
- Heat coconut oil in a thick bottomed non stick pan and add coconut slices and shallots and fry till golden brown.
- Then pour the batter to the pan and cook covered at low flame for 10-15 minutes till done.
