Tricolor Dosa

Ingredients:

3 cups of dosa batter

1 carrot, chopped

1 cup spinach leaves

salt to taste

oil, as required

Preparation:

  1. Peel and chop carrot into pieces and then puree to a smooth puree adding 2-3 tbsp of water in a blender. Keep it aside.
  2. Boil the spinach in little water and then puree until smooth adding 1-2 tbsp water in a blender. Keep it aside.
  3. Divide the dosa batter in 3 different bowls. Add required carrot puree in one bowl (saffron batter) and mix well.
  4. Then add spinach puree to another bowl (green batter) and mix well and leave the 3rd bowl with plain white batter. Adjust the salt in each batter.

Preparation Method 1:

  1. Heat a non stick pan / tawa on low flame. Pour 4-5 tbsp saffron batter in the centre of the pan and spread in circular motion.
  2. Then pour white batter around the saffron circle and gently spread with spoon.
  3. Now pour green batter around white layer and spread with spoon.
  4. Drizzle 1 tsp oil over the dosa and cook till done. Turn the other side and cook if required.
  5. Serve hot with chutney or sambar…

Preparation Method 2:

  1. Heat a dosa tawa/ pan and lightly grease with oil.
  2. Pour a ladle full of saffron batter in the centre and using the back of the ladle spread as concentric circles.
  3. Drizzle 1/2 tsp of oil over the dosa and cook till done. Turn the other side and cook if required.
  4. Continue the same method for the spinach / green batter and plain white dosa batter..
  5. Serve hot with chutney or sambar…
