Tricolor Dosa

Ingredients:
3 cups of dosa batter
1 carrot, chopped
1 cup spinach leaves
salt to taste
oil, as required
Preparation:
- Peel and chop carrot into pieces and then puree to a smooth puree adding 2-3 tbsp of water in a blender. Keep it aside.
- Boil the spinach in little water and then puree until smooth adding 1-2 tbsp water in a blender. Keep it aside.
- Divide the dosa batter in 3 different bowls. Add required carrot puree in one bowl (saffron batter) and mix well.
- Then add spinach puree to another bowl (green batter) and mix well and leave the 3rd bowl with plain white batter. Adjust the salt in each batter.
Preparation Method 1:
- Heat a non stick pan / tawa on low flame. Pour 4-5 tbsp saffron batter in the centre of the pan and spread in circular motion.
- Then pour white batter around the saffron circle and gently spread with spoon.
- Now pour green batter around white layer and spread with spoon.
- Drizzle 1 tsp oil over the dosa and cook till done. Turn the other side and cook if required.
- Serve hot with chutney or sambar…
Preparation Method 2:
- Heat a dosa tawa/ pan and lightly grease with oil.
- Pour a ladle full of saffron batter in the centre and using the back of the ladle spread as concentric circles.
- Drizzle 1/2 tsp of oil over the dosa and cook till done. Turn the other side and cook if required.
- Continue the same method for the spinach / green batter and plain white dosa batter..
- Serve hot with chutney or sambar…
