Cauliflower Dry Fry

Ingredients:

1/2 kg cauliflower, cut into florets
4 garlic cloves
small piece ginger
6-7 curry leaves
2 tbsp coriander leaves
2 tbsp yogurt
1 tsp lemon juice
5 tbsp plain flour
2 tbsp cornflour
2 tbsp rice powder
2 tbsp kashmiri chilli powder
1/4 tsp turmeric powder
1 tsp garam masala
1/4 tsp cumin powder
salt to taste
oil for frying

Preparation:

  1. Boil water in a pan and add cauliflower, little salt and 2 pinch of turmeric powder and boil for 2 minutes. Drain the water and keep it aside.
  2. Grind together garlic, ginger, curry leaves and coriander leaves adding lemon juice and yogurt to a paste.
  3. In a mixing bowl, add plain flour, cornflour, rice powder, kashmiri chilli powder, 1/4 tsp turmeric powder, garam masala, cumin powder and salt and mix well.
  4. Add ground paste and about 1/2 cup of water and mix well to make a batter.
  5. Add drained cauliflower to the batter and mix well till coated.
  6. Heat oil in a pan and fry the marinated cauliflower in batches till golden…Serve as a side dish or as a snack…
