Onion Chicken Roast


1 k chicken, cut into medium pieces
3-4 tbsp coconut oil
1/2 tsp fennel seeds
2 sprig curry leaves
2-3 tbsp pandan leaves (optional)
2 medium onions, finely chopped
1/2 cup shallots, thinly sliced
1 tbsp ginger, crushed
1 tbsp garlic, crushed
1 green chilli, finely chopped
1 tbsp kashmiri chilli powder
1 tbsp coriander powder
1/2 tsp pepper powder
1/2 tsp turmeric powder
1/2-1 tsp garam masala
1 1/2 small tomato, cut into large cubes
2-3 green chillies, slit
3/4 tsp soy sauce
1 1/2 tsp butter
salt to taste


  1. Heat oil in a pan over medium-high flame and add fennel seeds and stir for a few seconds.
  2. Add 1 sprig curry leaves and pandan leaves and cook for few seconds.
  3. Add chopped onion, shallots and little salt and cook covered, stirring occasionally till onion turns translucent.
  4. Add crushed ginger , garlic and 1 chopped green chilli and cook till soft and colour of onion changes.
  5. Add turmeric powder, kashmiri chilli powder, coriander powder and pepper powder and cook for few minutes at low flame till the raw smell are completely gone.
  6. Add garam masala and salt and cook for a minute.
  7. Add chicken pieces, mix well and cook for few minutes, stirring occasionally.
  8. Then cover and cook for 25-30 minutes till chicken pieces are completely cooked through, stirring occasionally. No need to add water while cooking…
  9. Open the lid and cook for 1-2 minutes until most of the moisture is evaporated.
  10. Add tomato, 2-3 slit green chillies, soy sauce, butter and few curry leaves and cook for 2 minutes over medium flame.
  11. Switch off the flame and serve after 15 minutes….
