Ingredients:
1 cauliflower ( 1/2 kg) , cut into small florets
1 tbsp + 1/2 tsp chilli powder
1 tsp + 1/2 tsp garam masala
1 tsp turmeric powder
1 tbsp ginger-garlic paste
1 1/2 tbsp cornflour
1 tsp coriander powder
1 tsp ginger, finely chopped
1 tsp garlic, finely chopped
1 big onion, cut into cubes
1 capsicum, cut into cubes
1- 1 1/ 2 tsp chilli sauce
2 tbsp tomato sauce
1 tsp soy sauce
2 tbsp crushed red chilli & kondattam mulaku / 2 dried salted curd chilli (thairu mulaku)
salt to taste
2 tbsp coriander leaves, chopped
oil, as required
Preparation:
- Boil water in a pan adding little salt and 1/4 tsp of turmeric powder. Add the cauliflower florets into this hot water and keep for 10 minutes and then drain the water.
- In a bowl, add the cauliflower, 1 tbsp chilli powder, 1/2 tsp turmeric powder, 1 tsp garam masala, ginger-garlic paste, cornflour and salt and mix well till coated. Add little water if required.
- Heat oil in a pan and deep fry the marinated cauliflower till golden brown and keep it aside.
- Heat 2 tbsp of oil ( use oil used for frying cauliflower) in a thick bottomed pan and add finely chopped garlic and ginger and saute.
- Add chopped onion cubes and saute till soft.
- Add coriander powder, 1/2 tsp chilli powder, 1/2 tsp garam masala, 1/4 tsp turmeric powder and mix well.
- Add chopped capsicum and saute for a minute.
- Add red chilli sauce, tomato sauce and soy sauce and mix well for 1-2 minutes.
- Add crushed red chilli flakes and kondattam mulaku ( dried salted curd chilli) and mix well till the raw smell goes.
- Then add fried cauliflower and mix well till combined. Adjust the salt and garnish with chopped coriander leaves and serve hot…
