Lamington Cookies


1 1/2 cup plain flour
1/2 tsp baking powder
125 gm unsalted butter
150 gm dark chocolate / milk chocolate chips
1/4 cup brown sugar
1 egg, lightly beaten
1/2 cup desiccated coconut
1 cup desiccated coconut, for coating


  1. In a saucepan, add butter ,chocolate chips and brown sugar and stir well at low flame until it melts completely and turns smooth.
  2. Remove from the flame and keep it aside to cool for about 5 minutes.
  3. Add egg, 1/2 cup desiccated coconut, plain flour and baking powder to the chocolate mixture and mix well until well combined.
  4. Then keep it covered in the refrigerator for 1/2 an hour to chill.
  5. Preheat the oven to 180 degree celcius. Line a baking sheet with baking paper/ parchment paper.
  6. Place 1 cup of desiccated coconut in a plate for rolling.
  7. Scoop a teaspoon of dough and then shape into a ball.
  8. Roll in desiccated coconut until completely coated and place on the prepared baking sheet and press lightly.
  9. Repeat the same with the remaining dough placing them about 2 inches apart.
  10. Bake in preheated oven for about 12- 15 minutes until the coconut slightly changes its colour.
  11. Remove from the oven and allow to cool for about 5 minutes on the baking sheet.
  12. Transfer them to a wire rack to cool completely….. Enjoy 🙂
