Chembappam

Ingredients:

1 cup rice flour
a pinch of salt
1 egg
1/4 tsp cardamom powder
3-4 tbsp sugar
1 cup thick coconut milk
oil, for frying

Preparation:

  1. In a mixing bowl, add rice flour and a pinch of salt and mix well.
  2. In another bowl, add egg, cardamom powder and sugar and mix well using whisk.
  3. Add this egg mixture to the rice flour and mix well.
  4. Then add coconut milk little by little and mix well with hand to a batter. The batter shouldn’t be too thick or runny.
  5. Heat oil in a pan and drop little batter with hand / spoon and fry till golden brown at medium flame.
  6. Drain them on paper towels and serve with tea / coffee…
