Ingredients:
3/4 cup couscous
1 onion, finely chopped
1/4 cup carrot, finely chopped
1/4 cup beans, finely chopped
1/4 cup potato, finely chopped
1/4 cup green peas
1 inch piece ginger, finely chopped
2 green chillies,finely chopped
1 1/2 cup boiling water
2 tbsp oil
salt to taste
1 sprig curry leaves
1 tsp urad dal
1 tsp mustard seeds
1 tbsp coriander leaves, chopped
Preparation:
- In a bowl, take the couscous and add salt and mix well.
- Add the boiling water to the couscous , mix well and keep it covered for 10 minutes. Then fluff it with a fork and keep it aside.
- Heat oil in a pan and splutter mustard seeds and add urad dal.
- When urad dal turns golden brown, add chopped onion, ginger , green chillies and curry leaves and saute well till onion turns transparent.
- Add finely chopped carrot, beans, potato, peas and salt and cook covered until the vegetables are soft,stirring in between. (Sprinkle little water if needed).
- Add the couscous to this and mix gently. Garnish with chopped coriander leaves and serve hot…
