Coin Biscuits / Egg Biscuits

Ingredients:

3/4 cup plain flour
1/2 tsp baking powder
2 eggs
5 tbsp sugar
2 tbsp butter, melted
1/2 tsp vanilla essence

Preparation:

  1. Preheat the oven at 120 degree celcius. Line a baking sheet with parchment paper.
  2. Mix plain flour and baking powder in a bowl and keep it aside.
  3. In a large bowl, add eggs and sugar and mix well using a whisk.
  4. Add vanilla essence and butter to this and mix well.
  5. Add flour- baking powder mix into this in batches and mix well to a smooth batter without lumps.
  6. Now fill the batter in an icing/ piping bag and make a small hole at the tip.
  7. Then squeeze small drops of batter into the prepared baking sheet leaving some space in between.
  8. Bake them in the preheated oven for 20-25 minutes.
  9. Remove from the oven and let it cool completely.. Store them in an airtight container when cooled…
