Schezwan Chicken Noodles

Ingredients:

200 gm boneless chicken, cut into small strips
180 gm noodles
1 tbsp garlic, chopped
1 big carrot
4-5 beans
1/2 red capsicum
1/2 green capsicum
1 spring onion, chopped
2 tbsp schezwan sauce
1 tsp soy sauce ( optional )
1/2-1 tsp vinegar
1/4 tsp pepper powder
a pinch of sugar
salt to taste
2 tbsp oil ( I used olive oil )

Preparation:

  1. Boil water in a large pan adding a tsp of oil and 1/2 tsp salt. Add noodles to this and cook till done. Strain in colander, rinse under cold running water and drain thoroughly. Keep it aside.
  2. Chop the carrot , beans and capsicums lengthwise and keep it aside.
  3. Heat oil in a pan and add chopped garlic and saute for few seconds.
  4. Add white part of spring onion and cook for 30 seconds. Then add chicken strips and little salt and stir fry for 2-3 minutes or till it changes its colour.
  5. Add chopped carrot, bean and capsicums one by one and stir fry for 2 minutes. Add little salt and sugar and mix well. Do not overcook the vegetables, it should be crunchy.
  6. Add the schezwan sauce, soy sauce, vinegar and pepper powder and mix well.
  7. Now add the cooked noodles and toss well at high flame until the sauce coats with the noodles well.
  8. Check the seasoning and add more sauce, pepper powder and salt if needed.
  9. Garnish with the chopped green part of spring onion and serve hot…
  • Use soy sauce, if you have not added while preparing schezwan sauce..
