Banana – Cinnamon Muffins


1 2/3 cup plain flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
2/3 cup sugar
1/2 cup oil
2 large eggs
1 tsp vanilla essence
2 small ripe bananas, mashed

For Cinnamon-sugar:

1/4 cup sugar
1/2 tsp ground cinnamon
1/4 cup melted butter


  1. Preheat oven to 180 degree celcius. Grease a 12- hole cupcake /muffin tin with baking spray or line the muffin tin with paper liners and keep it aside.
  2. In a bowl, whisk together plain flour, baking powder, baking soda, salt and ground cinnamon and keep it aside.
  3. In another large bowl, whisk together sugar, oil, eggs and vanilla essence.
  4. Then add the mashed banana and mix well. Add the flour mixture and stir until just combined.
  5. Divide the batter evenly into the prepared muffin tin and bake for 18-22 minutes until golden or until a skewer inserted comes out clean.
  6. In a small bowl, mix 1/4 cup sugar and 1/2 tsp ground cinnamon. Dip each muffin tops into melted butter and then into cinnamon-sugar and then serve….
