Ingredients:
1 1/2 cup plain flour
1/4 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
6 tbsp / 85 gm unsalted butter, softened
4 oz / 8 tbsp cream cheese, softened
1/2 cup sugar
1/2 cup brown sugar
1 large egg
1/2 tsp vanilla essence
2-3 ripe bananas, mashed ( 3/4 cup)
Preparation:
- Preheat the oven to 180 degree celcius. Line a 12 hole muffin tin with paper cases.
- Add plain flour, baking powder, baking soda and salt in a bowl and mix well until combined.
- In a large mixing bowl, beat butter and cream cheese using a hand mixer until creamy and smooth.
- Add sugar and brown sugar and continue to beat with the hand mixer until light and fluffy.
- Add egg and vanilla essence and mix well.
- Add the flour mixture little by little and stir with a spatula, until just combined.
- Add the mashed bananas to this and stir well.
- Divide the mixture between the paper cases and then bake in the oven for 20-25 minutes until a toothpick inserted comes out clean.
- Transfer the muffins to a wire rack and leave to cool completely…
